Pork Carnitas Adobo Loco Sliders with Red Onion Slaw

Red Onion Slaw

Red Onions thin sliced
2 Cups white vinegar
1 cup sugar
1 tsp black pepper
2 tsp salt
Mix vinegar, sugar and spices and pour over sliced onions. Refrigerate 2-4 hours

Pork Carnitas

5 lbs. Lard
6lb Pork Butt, de-bone and slice into 1-1/2 inch thick steaks
1/4 tsp Cumin
1/4 tsp Oregano
1/4 tsp Marjoram
1/4 Thyme
3-4 Bay Leaf
1/4 cup crushed garlic cloves
1 tsp black pepper
2 tsp salt

Season Pork and place in baking dish or pan.
Melt the lard and pour over pork butt to cover.
Bake at 350ยบ or Smoke uncovered until tender (3-5 hours)
Drain pork, cover and let rest in warm oven or smoker. When ready to serve, cut into thin strips.
Pour off Lard and save pork juice.

Adobo Loco Sauce

1 cup crema or sour cream
Heat the juice in a saucepan and mix with the Adobo Sauce and crema

Plate the sliders

Put the pork on the bottom buns, top with red onion slaw and loco sauce.
Limes
Cilantro
Cilantro and lime garnish.
